You can increase number of tables and complexity by adding more tables etc.
As Joey mentioned "this will belong to the person": so address is in my 
understanding a view on a person. Due to that salutation should be part 
of that "address".

But you can increase confusion:
Take a company-wide address folder:
When Mr. A writes to Customer C salutation should be "Dear Mr. C" while 
Mr. B is wellknown to Customer Claus C and always starts with "Hallo Claus"

So the point is: if this will be redesigned just focus on TYPO3 needs or 
try to  meet real world needs.
