I have another example:
Non mapped fields are very useful if you want to apply multiple 
CSS-classes to one element, e.g.

<div class="colorbox cscheme1 smallfonts">

You need a select list for the color scheme and a checkbox "use small 
fonts" but only one can possibly be mapped to the class attribute.
