[TYPO3] categorization for tt_content pages

What is the best way to create categorization for
tt_content pages so that they can be used to created
specifically sorted list – utilizing the ext
gst_topcontent  and gst_selectpro or some other typo3
ext that is better that I am not aware of.
Example categories are: 

Main Category: Fruit
Sub category: apples, pears, grapes

Fruit
---- Apples
------------- page 1
------------- page 2

---- Pears
------------- page 1
------------- page 2

---- Grapes
------------- page 1
------------- page 2
