[TYPO3-dam] Exclude fields in DAM

At least my work for the [No title] TYPO3 4.5 compatibility patch is 
honored now :-).

Besides from that:

I think we could set exclude => 0 for that field, too. Editing of that 
field can still be prevented by TSconfig.
