Hi Luca,

If I understand you correctly your trying to figure out where to input 
the stock? if so;

For each article there is a tab named "Extra information" - click that 
and you will find an input box labeled "Stock"

of course for this to happen you must install the extension 
"com_defaultstock" and add "plugin.tx_commerce_lib.useStockHandling = 1" 
to typoscript constants
