you need all of them (zzz_* not - normaly you can delete tables with starting name zzz)
But you need not all of them with content, like all tables of *cache* e.g. cachingframework_cache_pages or cache_treelist can be empty.

I think all be_* , sys_* , tt_content are important - with all others it depends on your installation...
