you can insert multiple values in each of these fields. 
You have only one inputfield for images as for caption, alt, title,
long-description.
in the input-field for the pictures you have no direct access, but you can
see it with phpmyadmin: all values are separated by commatas, 
the other fields can also hold multiple values, but these are separated
with linefeeds, as commats can be included as normal values.

If this doesn't work for you, I suppose that your installation is broken,
as I know this from all configurations

This works for "image(s) only" as for "text with image(s)"
