[Typo3] FORM content

Hi,

In the php code of formmail i can see :

$EMAIL_VARS['recipient'] = $record['subheader'];

does it means i can't setup recipient with a hidden field ?
becvause i have a combo for choice and depending your choice the 
recipient is not the same ?

Can someone explain it to me please, it gonna make me crazy
