Have a look at how the rlmp_tmplselector extension modifies a the items
of a select field in a backend form based on values set in TypoScript:
http://typo3.org/extensions/repository/search/rlmp_tmplselector/1.2.2/

I think it doesn't matter wether it's a flexform or not.
