Ciao Simone,

oltre al typoscript per il menu di cambio lingua, devi anche settare le 
lingua selezionata:

config.language = it
config.sys_language_uid = 0

[globalVar = GP:L = 1]
config.language = en
config.sys_language_uid = 1

[globalVar = GP:L = 2]
config.language = fr
config.sys_language_uid = 2

[end]

Così dovrebbe andare.
