1st Thing to do:
Create own Model extending \TYPO3\CMS\Extbase\Domain\Model\Category

2nf Thing to do:
Map the Model to the sys_category table
(TS Setup)
config.tx_extbase.persistence.classes.Vendor\ExtName\Domain\Model\Category.mapping.tableName = sys_category
