Fully agree with you.

We need to determine the list of needed demosites, according to potential
groups of companies.
I think it is more important, then show all possible features like in
downloadable testsite package.
Visitors must see "complete solutions, that can be made with TYPO3"

1) Small business (and may be medium) :
(official corp. site + 1 product advertising site)
The most common case, I think.

2) Intranet ??? (I do not know good examples)

3) Portal. May be news portal with news commenting,  with link directory.

4) Community ??? May be it is not good to use TYPO3 for pure community and
promote TYPO3 as super community solution (vBulletin or XOOPs is better) .
But I see one special case - product community on hi-end corporate web-site
May make it as a part of (1) ?

5) Blog ??? may be it must be part of (4)Community 

6) Eshop ??? May be part of (1)

7) Colleges
 http://princeton.ruv.net/typo3.0.html  is good example

8) Large companies. May be it is good to make demo with many pages,
departments pages, multi users in BE
(and use the same example of product site as in 1), but install it in this
typo3-installation)

But who will do all this great job? 

As for me, I can make (1) with HTML-template  like on
http://www.sitellite.org/index/about
and design http://www.iliqchuan.ru/iliq1.gif (but without this kung-fu logo
:-)  )

(8) and may be (7) needs really hi-end design (I can not do this)
