[TYPO3] need help with navigation

Hello.
I am absolutely new to Typo3 and my site is done by a freelancer. Howeve, he
has disappeared: not answering phone calls, sms, emails, skype.
He has constructed a sit for me which would deal with collectables. As such,
the site has a form to describe an item with many categories and
sub-categories. Howeverm the navigation menu is still demo onlky (it sounds
like "Zulu", "Menu item1", "subitem2" instead of normal). I tried to explain
it to him - but I failed.
All I want is to associate first 4 categories of content with navigation. If
we have toys, then it wound sound like
1 [country of origin]: Lithuania, Germany, Russia...
2 [related to 1]: province, if any - Bayern, Prussia, Moscow....
3 [type of toy, related to 1 and 2]: military, civilian, rasist...
4 [material of toy]: wood, iron, gold, plastic.
I want this to be displayed in a hierarchic way: the iutem 1 is main menu,
then it has submenu (item2), sub-sub menu (item3) and final submenu - item4.
Also, menu items are to be displayed strictly in the order I put them.
If anyone can handle this task - I would appreciate. I don't know how much
would it cost, but don't think it should be expensive.
Any comments would be highly appreciated
