You can redeem the gift certificate only when the user has logged in as 
a frontend user and then with the next order he can put his gift 
certificate code into the field to get the credit points.

The gift code will be sent to the recipient from the backend tracking. 
Here he can also write some additional text to the gift recipient. The 
shop administrator has to set the state to paid before this will be visible.
