[TYPO3-seminars] Order of the Available Items in the backend

Hi,

we're running a Typo3 website for one of our customers and since both my 
colleague and me have only started with Typo3 at the beginning of last 
year, we're a bit stuck on this little problem.
There are a few lists of available items in the backend when I'm trying to 
add or change a project (the lists are for the categories, the places, and 
the consultants) and I'm just not able to sort these lists according to 
the first letter (A-Z), or really any other way. I know that there has to 
be a way to change the settings and sort these lists however the customer 
wants us to but I'm totally at a loss what kind of changes need to be done 
and where I would have to make those changes.
Can anyone please help me out?
