I assume you're asking about how to select which data is filled in.

For SEARCH_ITEM, there's a drop-down "DB field to create the search
filter checkboxes from:" in the plugin flexforms.

For SORT_VALUE, there, there's a list of checkboxes "DB fields by which
a FE user can sort the list view:" in the plugin flexforms.
