There's a big discussion about « Installation Documentation », should it 
cover Apache, MySQL, Linux, and other stuff installation too.

That's how I resume this. ;-)

I think a good compromise could be in the publishing script. The Wiki to 
SXW stuff seems to be the perfect tool to solve most of the problem.

Here's how I see it.

Write the doc in the Wiki in a structured way (read split).

When the documentation is published, the script group common part in the 
final document, including duplicated part in many install document version.
