[TYPO3-dam] media types

I added a section to the manual about this topic. This is mainly the content 
from this threat but it documents how it works and how the mime/media type 
detection can be custumized.

Additionally there are TSconfig options now to enable/disable the different 
types of mime type detection. And the conversions to media types can be 
disabled.
