[TYPO3-commerce] order types?

Hello all,

I'm utterly confused about several things with commerce.  I got it 
running on one installation, but have found numerous problems now that 
it's running.  I'm hoping to get a couple of clarifications here before 
I dive back in...

I've just upgraded commerce on a copy of one installation.  I'm noticing 
that the "order type" is blank and doesn't have any options. I wonder if 
this is one of my problems.  Where are the order types supposed to come 
from?
