i would not do it at this time.

1) wiki.typo3.org is well configured - wiki in forge does not has so 
many features
2) you cannot upload images on forge-wiki at the moment
3) as you said, there are some people writing an documentation about 
commerce right now - perhaps that documentation could then be integrated 
into forge wiki?
