Hello Martin, 

I never used the Commerce extension before but the way you describe the 
problem sounds like a typical mandatory field not being filled out 
correctly.   It could be  from a limited BE user which can't edit all 
fields, or, for admins, either special page tsconfig or a disctinct 
flexform that removes unused fields yet an extension update added news 
required fields

Now, to find what required field is missing, you could look for it in the 
TCA and compare which ones are required vs wich fields you see in the 
backend when saving records. 

You can also try to copy and paste a record in the same page to see if you 
have all required access and permissions if you're not using an admin 
account.

I'm pretty sure it should be an easy fix and you only overlooked 
something.
