Which technique you like or don't like is almost like a religion. Some 
love Fluid, others are passionate about TemplaVoilà.

Fortunately TYPO3 doesn't force you to use one way. As Dmitry already 
said you can build pages with TypoScript only, use handcrafted templates 
with markers, use automaketemplate to automate the markers, use 
TemplaVoilà with a point&click interface to map content to your 
template, use Fluid, or even other extensions which might provide you 
with other templating mechanisms (smarty?).
