You may set empty value for <option> tag of your "Select One" option.
If I recall correctly, you can do it in such a way at powermail
Select One||*
First part is text between <option>-tags, second part - value of 
<option>-tag, third part *-means, that this option is selected by default.
ALso there is an option (should be amont TS constants, I guess), that 
discards empty values from emails.
Take a look at powermail's manual to find that TS config and see correct 
syntac of select-boxes options.
