You can remove the folder of an extension in typo3conf/ext/
[yourExtToRemove]. You should uninstall it first of course. After that, 
their might be files in typo3temp/* typo3conf/temp_* and uploads/
[yourExtToRemove]/*

The extension manager offers you to delete an extension from server to. 
Just click the extension and select Backup/Delete from dropdown.
