[TYPO3] Need help to set up website languages

I certainly don't want to damage my TemplaVoila mappings.
So, how can I set the database Character Set and increase field lengths.
Do I really need to set database Character Set to utf8?

On another subject: I have been using a custom (non Typo3) menu, built
in my template. My understanding is that when I implement the one-tree
localization, pages in different languages will use the same template.
So, if my menu is embedded in the template, the same menu (in the
default language) will be used for all languages. But I need to localize
the menu as well. On the other hand, I don't want to use Typo3's dynamic
menu (I have some menu items that link to outside pages, and my desired
menu tree structure is not the same as my site page structure).

Now, my question is: Is there a way to not use the Typo3 generated menu,
and at the same time have a translated menu in different languages?

This will render some serialized strings unusable. For example,
TemplaVoila will loose all mappings.
