Have you added categories in the correct location? Usually the Storage 
Folder.

Have you set the General Records Storage Folder parameter so that news 
plugin knows where the categories are?

Are you adding a category into the news item?

Why not post your typoscript or are you adding the plugin directly to 
the page?
