[Typo3] Creating custom document types

Hello everyone,

I want to create custom document types in Typo3. But I have no idea on
how this should be done or where to start.

My goal is to be able to create a data structure for say an Essay. My
authors should then be able to create a new document by selecting an
Essay from a menu. He should then be presented with a form with the
different elements in an Essay (a title (compulsory), document author,
body (free text), comments).

Currently I don't care much for the presentation, "only" the data
structure of the document and the form to create new elements.

I've looked at templaviola but I'm not sure this is the best solution.
Any idea, suggestions and examples are welcome.
