Try the following:

plugin.tx_danewslettersubscription_pi1 {
  email_from = news at rgv.ca
  email_fromName = Your sender name here
  replyTo = reply-to-address at rgv.ca
}

And yes, it's not very well documented, but looking in the sourcecode of the 
extensions can help you quite a lot ;)
