[Typo3] BE forms organization

Is there a good reference or tutorial somewhere on how to hide and 
rearrange various fields in a BE form?

For example, moving fields to different tabs, or removing tabs 
altogether, etc.?

Rupert Germann supplied a good hint when I added a new field to the 
tt_news extension, but the same technique doesn't seem to work for 
removing fields.

I'd like to know what the format is for the second argument of 
addToAllTCATypes() for example... There's lots of semicolons and stuff 
like "1-1-1" which I don't understand.
