There are extensions to convert all fields of the database to utf-8
(Just search for "utf" in the extRep)

But notice that you will also have to change newsletter, fe-user admin
and other HTML templates or Strings with Accented characters or umlauts
in the "normal" HTML templates ...

you will also need to convert those ...

so it is nothing you can switch without having some down-time on your site.
(except if you make a complete second installation and switch over to those)
