I am sorry I can't help you, but I have been looking at something similar
the past days, as we are fighting some problems with spamfilters. A form
which has the senders as the one filling out the form is a problem for us,
as some forms get caught in the outlook spamfilter. Now, for a customer to
be sure that mails from the website is received all times, this is a
problem. Changing the name and email field only makes the sender becomes the
standard emailaddress setup at the server, so this is no good way. Putting
the email field as a hidden field is no good way either, as it makes the
email being printed unencrypted, and therefor could be picked up by
spamrobots.

We need some kind of secure way we could implement in all solutions, to make
sure our customers will receive the emails from the website.

I will keep looking for solutions, I am not sure what your problem is, but I
find it unsmart to have the sendername/senderaddress not to be the customer
who filled in the form, as replies will not be sent correctly (and I am sure
that some customers of ours will get that problem because of the missing
knowledge on outlook etc.).

Please let me know whatever you find out, so will I the other way around.

Maybe those emails becomes spam easier because of the missing <html> (and
others) tags in the mail, when sent as HTML.
