Due to lack of hints i searched the solution myself; the one i found was to declare a hidden HTML input element and set it's value to the selected value that should be stored. Example code can be found in the Sphinx extension in the file ../typo3conf/ext/sphinx/Classes/EM/Configuration.php in lines 137..151.
