OK, to summarize the whole story:

1) Is it right that German Umlaute don't work in flexforms with iso-8859-1
or should they work? Because they don't even if I set the header and
encoding correctly.

OR

2) Do I have to use utf-8 if I want to store Umlaute in flexforms
and use conversion functions afterwards?
