You can have default values in FlexForms by modifying the class.t3lib_transferdata.php file... Check the bug page (http://bugs.typo3.org/bug_view_advanced_page.php?bug_id=0000214)

That's not a very good solution, I think, but it will maybe help till the bug is fixed...
