As concerns extensions: I recently had to migrate a complete T3
installation to a different server, where only the basic installation of
an empty 3.5.0 "dummy" had been prepared. 

I did not know where to fnd the "old" version e.g. of the "new login
box" but needed that one, as the new one was reported to correctly
function only with 3.6.0RC1. 

I just backed up everything necessary from the former installation as
*.tar on CD, dropped in the proper directory, started ext. man and it
reported me all of the desired extensions (incl. my self made changes)
to be readily available for install. 

As for documentaton, you just include the various *.sxw docs in the *tar
file. As for the installation, you prepare a mySQL dump which you import
into the new install. Everything no problem. Setting up the same site on
a new server was about 2,5 hours of concentrated work (even given that
there were different PHP and Apache versions working ...) and afterwards
doing some "debugging" of forgotten details ("Why does simStatDocs not
work?" "Have you dumped the .htacces?" "Uh, no ...").
