But of course that only works if the different installations have access
to the symlink destination. With open_base_dir enabled you might
consider creating a dedicated directory for sharing typo3conf/ext
extensions and symlink to that directory. 

If you have many people working on your server and you don't know them
personally, make sure that nobody than you has write access on that
shared typo3conf/ext dir ...
