Dir rechte Variante ist UTF-8 angezeigt als iso-8859-1.

Soweit ich weiß werden die Charset Einstellungen von TYPO3 bei Mails 
komplett ignoriert. D.h. für dich, dass du in deinem externen Mail KEIN 
UTF-8 verwenden darfst.
